THE CHEF
Riki Fukuda
Born in 1981. Started out as a professional MMA fighter, becoming champion in two of Asia’s top organizations—DEEP and Road FC—and competing on the world’s biggest stage, the UFC. These experiences helped build a strong sense of discipline and resilience.
In 2017, made a transition into the culinary world. After graduating from a sushi academy in Tokyo, moved to Amsterdam in 2018 to gain hands-on experience working in several local restaurants.
In 2022, opened Dining Tokyo in Leiden together with his wife, aiming to bring authentic Japanese cuisine to the Netherlands with the same passion and focus developed through years of professional competition.
Shiho
From a young age, Shiho has had a deep love for good food and staying active.
She gained experience working at several restaurants in Tokyo, building a solid foundation in both culinary and hospitality fields. During her husband’s MMA career, she played an important role in supporting his nutrition and diet, deepening her knowledge of food and health.
After moving to the Netherlands, she began participating in food festivals and pop-up events, sharing her cooking with a wider audience.


THE RESTAURANT
Since opening in November 2022, Dining Tokyo has been delighting guests in Leiden with authentic Japanese home-style dishes prepared by experienced Japanese chefs. Our diverse menu features everything from fresh sashimi and sushi to bento boxes and hearty rice bowls, all crafted with care and tradition.
We proudly accommodate a wide range of dietary needs, offering Halal, vegan, and gluten-free options. Our restaurant is family-friendly, barrier-free, and provides free Wi-Fi for your convenience.
Of course, no Japanese dining experience is complete without sake — and we offer a carefully curated selection to complement your meal.
